Benvenuti in Italia!

Greetings from Panzano, Tuscany!

And so we have begun! After arriving in Panzano Saturday evening, us Holy Cross students have been very excited to start discovering the broader philosophical identity of the food we consume on the daily basis. We can all agree that there is no better place to do so than in the hills of Tuscany!

On Saturday we eased into our new homes at Le fonti and Le cinciole – two well-known wine estates in Panzano – and at the B&B La Piazzetta, in the town center. Very early Sunday morning we began to learn. The trip to the local market Sunday morning gave us a taste of the variety and culture of the town. Soon after we embarked on our excursion via the path to Volpaia with our naturalist guide Martino Danielli who taught us about the biodiversity of the local plants and animals. After three hours of walking the winding hillside we arrived at the rustic, thirteenth century town of Volpaia to indulge in our first lunch in Italy, the Bar-Ucci. This little eatery is a place like no other, not because of its food, which are yummy, but especially because of the people running in, most notably Paola Barucci, the owner. A lovely afternoon, then we embarked on a two-hour walk back to Panzano in order to prepare for the evening ahead.

Our welcome dinner to Panzano was a treat to all as we gather at L’Antica Macelleria Cecchini for a huge feast! We learned a lot about Dario Cecchini’s philosophy of butchery, which he passionately incorporates into every part of his work. Dario gave us two memorable speeches during the evening, as we sat in a special room of the butcher shop were once he used to perform meat carvings. According to Dario, every part of the animal, “dal naso alla coda,” is important and useful for human benefit. A fun night of friendship and laughter lasted to the early our of the morning and our first full day in Panzano was finished.

This morning our education continued as we learned the lifestyle of the “poor kitchen” as we helped prepare a simple yet delicious meal again stressing the principle that every piece of resource available is important and can be used for human benefit. After lunch, we held our first day of class as we discusses some of the challenges that humanity has historically faced in the interpretation of food in western philosophy.

It has been a busy few days but we all cannot wait to see what awaits in the coming month!

Saluti da Panzano, Toscana!

Allora abbiamo incominciato! Dopo l’arrivo a Panzano, sabato sera, noi studenti di Holy Cross siamo stati molto eccitati a scoprire l’identita’ filosofica del cibo che noi consumiamo ogni giorno. Siamo tutti d’accordo che non c’e` un posto migliore per studiare la filosofia del cibo.

Sabato sera siamo arrivati alle nostre case di Panzano. Tre sono nelle aziende Le Fonti e le Cinciole, una al B&B La Piazzetta. Domenica mattina, abbiamo cominciato ad imparare. La passeggiata al mercato ci ha dato un saggio della cultura del paese. Dopo, abbiamo fatto una passeggiata di circa 9 km (e 9km al ritorno!) attraverso il bosco e le vigne fino a Volpaia con la nostra guida Martino Danielli. Martino ci ha spiegato molti dettaglia della biodiversita` di Panzano e della Toscana. Dopo tre ore, siamo arrivati al paese medioevale del tredicesimo secolo. Abbiamo avuto il nostro primo pranzo al Bar-Ucci, gestito dalla energica e simpaticissima Paola Barucci. Dopo abbiamo fatto marcia indietro verso Panzano, dove siamo arrivati alle 6pm, affamati per la cena di benvenuto. Abbiamo banchettato all’ Antica Macelleria Cecchini. Dario ha tenuti due discorsi durante la cena, in cui ci ha illustrato la sua filosofia della carne, che considera la base del suo lavoro. Secondo Dario, ogni parte del’ animale e` importante “dal naso alla coda.” Dopo una serata di amicizia, siamo andati a letto, stanchi ed eccitati.

Stamattina, abbiamo proseguito la nostra educazione imparando della “cucina povera” nella cucina di Lele e Elisa. Abbiamo preparato un buon pranzo, mentre imparavamo quanto ogni risorsa disponibile in cucina sia importante. Dopo il pranzo, abbiamo fatto le nostre prime lezioni. Abbiamo discusso le sfide del cibo nella filosofia del mondo occidentale e poi proseguito con le lezioni di italiano.

Questi giorni sono stati molto impegnativi ma gli studenti sono entusiasti!
