Fonte di Foiano Olive Oil, Bolgheri, Saturday May 31, 2014

On May 31 we departed for Bolgheri, with a short stop outside the walls of Volterra. In Bolgheri we first headed to the olive oil orchard of Fonte di Foiano, a family run orchard producing high quality olive oil.

Dario Cecchini’s Shop At 360 Degrees, Friday May 30, 2014

On Friday morning, May 30, we visited Dario Cecchini’s chianine farm on the Fontodi wine estate, to learn about his project of chianine di lunga vita (long life chianina cows). We then assisted to the processing of a leg, and visited the restaurants that Dario and Kim run.

Hike from San Giusto in Salcio to San Polo in Rosso, Thursday May 29, 2014

On Thursday May 29, we hiked with Martino Danielli from the pieve of San Giusto in Salcio to San Polo in Rosso, through Galenda, between old samples of Chianti agriculture (terraced cultivations, maple trees, mulberry trees, etc.).

Visit to Fattoria Nittardi, Wednesday May 28, 2014

On May 28th we visited Nittardi wine estate, at the opposite end of the ‘conca d’oro’ (golden valley) than Panzano. Leon Femfert and his oenologist Roberto Geloni showed us the vineyards, the cellar, and prepared an entertaining game: four groups of students made their own wine starting from three varieties; the winners were awarded a magnum of Ad Astra, one of Nittardi’s red wines.

Dinner at L’Imbuto by Cristiano Tomei — Lucca, Sunday May 25, 2014

Pisa — Saturday May 24, 2014

Besides visiting De Bondt’s and De’ Coltelli’s shops, in Pisa we strolled around the city center, had some cecina at pizzeria Il Montino, and visited Piazza dei Miracoli.

Lucca — Sunday May 24, 2014

On our route to Lucca, we stopped in Pieve a Elici, to look at the Versilia coast from up a hill and to visit the old Pieve. In Lucca, we strolled around the city for a few hours, waiting for our dinner at Cristiano Tomei’s L’imbuto.

Viareggio — Saturday and Sunday, May 24-25, 2014

While in Viareggio, we had some days of fair weather at the beach and a dinner at Prof. Borghini’s house, where his parents and his sister prepared us a typical home meal, with pasta trabaccolara, salad, melon and prosciutto (from Macelleria Falaschi), sausages (from Macelleria Falaschi), and gigantic croissants filled with cream from Camaiore.

Gelateria De’ Coltelli — Saturday May 24, 2014

While in Pisa, we visited also the gelateria De’ Coltelli, a Sicilian style gelateria along Pisa’s Arno river, which offers high quality ice creams. Gianfrancesco Cutelli had us sample most of his flavors, sharing also samples of ingredients and of techniques of production.

De Bondt Chocolate — Saturday May 24, 2014

On Saturday we headed to Pisa, for a visit to De Bondt chocolate shop, where Paul gave us a wonderful class on his ‘slow’ approach to chocolate.
